Bento Box Basics — Ginger Soy Chicken Rice
A classic Japanese bento with sweet ginger soy chicken thigh, steamed rice and quick-pickled cucumber. Glazing the chicken with the remaining marinade in the final minutes of cooking is what builds a sticky, caramelised coating rather than leaving it just lightly seasoned.
