Ingredients

200gfresh or frozen New Zealand whitebait, drained
2eggs, beaten
1 tspplain flour
salt and pepperto taste
2 tbspbutter
lemon wedges and fresh breadto serve

Instructions

Gently mix whitebait, eggs and flour. Season.
