Silky Korean pumpkin porridge studded with chewy rice flour dumplings and sweet red beans. Dropping the rice dumplings into the simmering puree and cooking just until they float is what tells you they're done, still chewy rather than falling apart.

Ingredients

600gKorean pumpkin or butternut squash, cubed
800mlwater
3 tbspglutinous rice flour
2 tbspsugar
1 tspsalt
adzuki beanscooked and sweetened, to garnish

Instructions

Simmer pumpkin in water until very soft, 20 minutes. Blend until smooth.

Mix glutinous rice flour with 3 tbsp water to form small dumplings.

Bring pumpkin puree back to simmer.

Drop in rice dumplings, cook 5 minutes until they float.

Add sugar and salt.

Serve warm topped with sweet adzuki beans.
