
Classic Trifle
A great British celebration trifle, layered with sherry-soaked sponge, jelly, custard and cream. Letting the jelly set fully in the fridge for two hours before the cream goes on top is what keeps each layer distinct when the trifle is spooned out, rather than collapsing into a mush.

200gtrifle sponge fingers or madeira cake, cubed
1 packetstrawberry jelly, made and cooled to set
400gtinned peaches or fresh strawberries
600mlthick vanilla custard
300mldouble cream, whipped
2 tbspsherry or fruit juice
fresh berries and hundreds and thousandsto decorate

Layer sponge in a large trifle bowl. Drizzle with sherry.

Break up jelly over sponge. Add fruit.

Pour custard over. Refrigerate 2 hours to set.

Spread whipped cream on top.

Decorate with berries and hundreds and thousands.
