
Sticky Date Pudding (Classic)
Australia's most popular restaurant dessert — warm date sponge with butterscotch sauce. Soaking the dates in boiling water with a pinch of bicarb before they go into the batter softens them enough to break down into the sponge, giving it that moist, sticky crumb.

Instructions
Soak dates in boiling water with bicarb 10 minutes. Cool.
Beat butter and sugar. Add eggs.
Fold in flour and vanilla. Stir in date mixture.
Pour into a greased 23cm square tin.
Bake at 180°C for 30 minutes. Make sauce: boil butter, sugar and cream 3 minutes. Pour over pudding.
