Ingredients
300gidli batter fermented overnight
200gtoor dal
200gmixed vegetables such as drumstick beans and tomatoes
2 tbspsambar powder
2 tbsptamarind paste
1 tspturmeric
1 tspmustard seeds
15curry leaves
2dried red chillis
3 tbspvegetable oil
1 pinchasafoetida
fresh corianderto serve
Instructions

Grease idli moulds, fill with fermented batter.

Steam over boiling water 12 minutes until a skewer comes out clean.

Cook toor dal until soft, add vegetables and simmer 10 minutes.

Add sambar powder, tamarind and turmeric, simmer 15 minutes.

Heat oil, add mustard seeds, curry leaves, chillis and asafoetida.

Add tempering to sambar, stir through.

Serve hot idlis with sambar and coconut chutney.
