Sprouts as they should be — pan-fried with crispy bacon and chestnuts. Frying the sprouts cut-side down in the bacon fat lets that flat surface caramelise into a deep golden crust instead of just steaming through.

150gbacon lardons
100gcooked chestnuts, halved

Blanch sprouts 3 minutes in boiling water. Drain.

Fry bacon in a pan until crispy. Add butter.
