Zha Jiang Mian

Zha Jiang Mian

Beijing-style noodles with fermented soybean paste meat sauce and fresh vegetables. Simmering the bean sauces with a little water for a full 10 minutes mellows their intense fermented flavour into something rich and balanced rather than overpoweringly salty.
