Chocolate Self-Saucing Pudding

A magical baked pudding that creates its own chocolate sauce underneath the sponge. Pouring the boiling water gently over the back of a spoon, rather than straight from the kettle, keeps it from disturbing the batter, letting the sauce settle underneath as it bakes.

Ingredients

1 cupself-raising flour
3/4 cupcaster sugar
3 tbspcocoa powder
1/2 cupmilk
2 tbspbutter, melted
1 tspvanilla extract
1/2 cupbrown sugar
1/4 cupcocoa powder
1 1/2 cupsboiling water
ice creamto serve

Instructions

Preheat oven to 180°C. Sift flour, caster sugar and 3 tbsp cocoa into a bowl.

Stir in milk, butter and vanilla until smooth. Spread into a greased baking dish.

Mix brown sugar and 1/4 cup cocoa. Sprinkle evenly over the batter.

Pour boiling water over the back of a spoon so it gently covers the surface.

Bake 30-35 minutes until the top is set. Serve immediately with ice cream.
