Devonshire Apple Cake

A thick, moist West Country apple and cinnamon cake served warm with clotted cream. Folding the diced apple through the batter gently, right at the end, keeps the pieces distinct and juicy instead of breaking down and disappearing into the crumb.

Ingredients

200gbutter, softened
200gcaster sugar
3eggs
200gself-raising flour
1 tspcinnamon
1/2 tspbaking powder
2 tbspwhole milk
3Bramley apples, peeled and diced
2 tbspdemerara sugar
clotted creamto serve

Instructions

Beat butter and sugar until fluffy. Beat in eggs.

Fold in flour, cinnamon and baking powder with milk.

Fold in diced apple.

Pour into a greased 20cm tin. Scatter with demerara sugar.

Bake at 180°C for 50-55 minutes. Serve warm with clotted cream.
