Ma Yi Shang Shu

Ants climbing a tree — transparent glass noodles in a spicy pork mince sauce. Adding the pre-soaked noodles at the very end and letting them cook in the sauce until they absorb it gives the dish its name, as the clinging pork mince looks like ants on the noodles.

Ingredients

200gglass noodles, soaked
300gpork mince
2 tbspdoubanjiang
2 clovesgarlic, minced
1 tspginger, minced
2 tbspsoy sauce
1 tspsugar
200mlchicken stock
spring onions and sesame oilto serve

Instructions

Fry doubanjiang, garlic and ginger in oil 1 minute.

Add pork mince, cook until browned.

Add soy, sugar and stock. Bring to simmer.

Add soaked noodles and cook 3 minutes until noodles absorb the sauce.

Scatter spring onions, drizzle sesame oil and serve.
