Ingredients

600gbeef sirloin
1Thai basil
1/2 cuplime
150gscallions
2 cupsrice noodles
1 tspfish sauce
to tastehoisin sauce
1/4 cupstar anise
2 tbspchili
1 tbspolive oil
to tastesalt and black pepper

Instructions

Season the beef sirloin and roast it over medium-high heat until well browned, about 7 minutes.

Add the scallions, cooking until softened, about 4 minutes.

Stir in the fish sauce, hoisin sauce, star anise and chili for 2 minutes.

Cook the rice noodles separately according to package directions.

Let the beef simmer for about 6 minutes so the broth deepens.

Squeeze the lime over and toss through the Thai basil just before serving.

Serve hot over the rice noodles, garnished with fresh herbs.
