
Fatayer
Lebanese baked pastry triangles filled with spinach and sumac, crispy, tangy and perfect as mezze. Pinching the three edges firmly to seal each triangle stops the filling leaking out and burning in the oven.

Instructions
Make dough with flour, yeast, salt, water and oil, knead 8 minutes, prove 1 hour.
Mix spinach with onion, sumac, lemon juice, salt and pine nuts.
Divide dough into 20 balls, roll each into a circle.
Place a tablespoon of filling in the centre.
Bring three edges up and pinch firmly to form a triangle.
Place on a baking tray, brush with olive oil.
Bake at 200C for 20 minutes until golden.
Serve warm or at room temperature with lemon wedges.
