Pan-fried leftover mashed potato and cabbage, a classic British Monday breakfast. Leaving the patty completely undisturbed while it cooks lets a proper crispy crust form on the bottom instead of breaking apart into a stir-fry.

400gleftover mashed potato
200gleftover cooked cabbage or Brussels sprouts, chopped
1small onion, finely diced
2 tbspbutter
1 tbspolive oil
salt and pepperto taste

Mix potato, cabbage and onion. Season.

Heat butter and oil in a large frying pan.

Press mixture into the pan to form a large patty.

Cook over medium-high heat without moving for 6-8 minutes until a crispy crust forms.

Flip in sections (it will break up, that's fine). Cook another 5 minutes. Serve with fried eggs.
