Thai Massaman Curry

Rich, mildly spiced Southern Thai curry with beef, potato and peanuts. Frying the curry paste in the thick coconut cream that rises to the top of the tin, rather than plain oil, is the traditional technique that builds massaman's deep, rounded flavour.

Ingredients

700gbeef chuck, cubed
400mlcoconut milk
400gtinned coconut cream
3 tbspMassaman curry paste
3medium potatoes, cubed
1large onion, cut into wedges
50groasted peanuts
3 tbspfish sauce
2 tbsppalm sugar
3 tbsptamarind paste
3bay leaves
1 stickcinnamon

Instructions

Fry curry paste in 3 tbsp coconut cream 3 minutes.

Add beef, seal.

Add remaining coconut milk and cream, bay and cinnamon.

Simmer covered 45 minutes.

Add potato and onion.

Season with fish sauce, palm sugar and tamarind.

Simmer 20 minutes.

Add peanuts.

Serve with jasmine rice.
