Ingredients

400gfirm tofu
200gThai basil
200gcarrots
200gscallions
4 servingsbaguette
to tastehoisin sauce
2 tspstar anise
1/4 cuplemongrass
2 tspchili
1 tbspolive oil
to tastesalt and black pepper

Instructions

Press the tofu between paper towels to remove excess moisture, then cube it, season, and stir-fry over medium-high heat until well browned, about 9 minutes.

Add the carrots and scallions, cooking until softened, about 7 minutes.

Stir in the hoisin sauce, star anise, lemongrass and chili for 4 minutes.

Warm the baguette separately.

Let the tofu simmer for about 7 minutes so the flavors meld.

Toss through the Thai basil just before serving.

Serve hot over the baguette, garnished with fresh herbs.
