
Sticky Gingerbread
A dark, soft and intensely spiced British gingerbread loaf, better the day after baking. Wrapping and resting it overnight before cutting lets the syrup and treacle soften the crumb into its signature sticky texture.

100gbutter
150ggolden syrup
150gblack treacle or molasses
150gbrown sugar
250mlwhole milk
2eggs
300gplain flour
2 tspground ginger
1 tspcinnamon
1/2 tspmixed spice
1 tspbicarbonate of soda
Instructions

Melt butter, golden syrup, treacle, sugar and milk together. Cool slightly.

Whisk in eggs.

Sift flour, spices and bicarb. Stir into liquid mixture.

Pour into a lined deep 20cm square tin.

Bake at 160°C for 50 minutes. The cake will sink slightly. Cool in tin, then wrap and rest overnight before cutting.
