Ingredients

8 thick sliceswhite bread, buttered
3eggs
1 1/2 cupswhole milk
1 cupthickened cream
3 tbspcaster sugar
1 tspvanilla extract
pinchnutmeg
pinchcinnamon
2 tbspraisins or sultanas
demerara sugarfor sprinkling
cream or custardto serve

Instructions

Arrange buttered bread in a greased baking dish, overlapping slightly. Scatter over raisins.

Whisk eggs, milk, cream, sugar, vanilla, nutmeg and cinnamon together.

Pour custard over bread. Press down gently. Rest 15 minutes.

Sprinkle with demerara sugar.

Bake at 180°C for 35-40 minutes until puffed and golden on top. Serve warm with cream or custard.
