Fold in mascarpone until smooth.
Whip egg whites to stiff peaks, fold gently into mascarpone mixture.
Mix espresso and Marsala. Dip savoiardi briefly and layer in a dish.
Spread half the mascarpone cream over the biscuits.
Repeat with another layer of dipped biscuits and cream.
Dust generously with cocoa, refrigerate at least 4 hours before serving.
