1.5kglamb shoulder, bone in
400glong grain rice
2onions, diced
4 clovesgarlic, minced
1 tspground allspice
1 tspground cinnamon
1 tspturmeric
1 tspground cumin
800mllamb stock
80gtoasted almonds and pine nuts
50graisins
4 tbspghee
Instructions

Brown lamb in ghee, add onions and cook until golden.

Add garlic and all spices, cook 2 minutes.

Add stock, cover and braise 2 hours until very tender.

Remove lamb, shred meat roughly.

Cook rice in lamb broth with raisins.

Mound rice on a large platter.

Arrange shredded lamb over rice.

Scatter with toasted nuts and serve.
