Silky smooth Lebanese-style hummus made with dried chickpeas, tahini and lemon. Blending the chickpeas while they're still warm from cooking is what gets them properly silky — cold chickpeas never blend as smooth.

Ingredients
300gdried chickpeas, soaked overnight
1 tspbicarbonate of soda
150gquality tahini
juice of 2lemons
3 clovesgarlic
1 tspsalt
iced wateras needed
olive oil, paprika and parsleyto serve

Cook chickpeas with bicarb until very soft — 45–60 minutes. Reserve some cooking water.

Blend chickpeas while still warm until completely smooth.

Add tahini, lemon juice and garlic. Blend.

Stream in iced water until very silky and pale. Season.

Spread in a bowl, make a well, fill with olive oil.

Dust with paprika and scatter parsley.
