400mlwarm pork stock
1 tspbaking powder
600gpork shoulder, slow-cooked and shredded
3ancho chillis, toasted soaked and blended with garlic
1 tspground cumin
16dried corn husks, soaked
Instructions

Beat lard until fluffy, mix with masa harina, stock and baking powder into soft dough.

Mix shredded pork with ancho chilli sauce and cumin.

Spread masa on softened corn husks, leaving edges clear.

Add pork filling down the centre.

Fold husks to enclose, fold bottom up to seal.

Steam standing upright 1.5 hours.

Tamales are ready when masa pulls cleanly from husk.
