Ingredients

1.5kgchicken pieces
4mulato chillis, toasted and soaked
4ancho chillis, toasted and soaked
2pasilla chillis, toasted and soaked
50gdark chocolate 70%, chopped
50gsesame seeds, toasted
50gpumpkin seeds, toasted
2ripe tomatoes, charred
1white onion, charred
4 clovesgarlic, charred
1 tspground cinnamon
2cloves
3 tbsplard or vegetable oil
500mlchicken stock

Instructions

Blend soaked chillis with tomatoes, onion, garlic, sesame, pumpkin seeds and spices.

Fry paste in lard over medium heat 10 minutes, stirring constantly.

Add stock gradually, stirring until smooth sauce forms.

Add chocolate and stir until melted.

Simmer mole 30 minutes, stirring frequently — it will darken and deepen.

Season generously with salt and a pinch of sugar.

Braise chicken in mole for 30 minutes, serve with rice and warm tortillas.
