Ingredients

600gpotatoes, boiled and mashed
2green chillis, minced
2cmfresh ginger, minced
1 tspground cumin
1 tspgaram masala
1 tspamchur
50gpeas, boiled and roughly mashed
1 handfulfresh coriander, chopped
3 tbspvegetable oil
tamarind chutney and mint chutneyto serve

Instructions

Mix mashed potato with chilli, ginger, cumin, garam masala, amchur, peas and coriander.

Season well with salt.

Divide into 12 portions and shape into flat round patties.

Heat oil in a wide pan over medium heat.

Fry tikki in batches 4 minutes each side until deeply golden and crispy.

Do not move them while they are cooking — let a crust form.

Serve hot with tamarind chutney and mint chutney.
