Ingredients

800gbeef brisket
4chicken thighs
4carrots, halved
4leeks, trimmed
4potatoes
4turnips
2onions, studded with cloves
1celery head
2Lwater
Dijon mustard, cornichons and horseradishto serve

Instructions

Cover beef with cold water and bring to boil. Simmer 1 hour.

Add chicken and all vegetables.

Simmer gently 1 more hour until everything is tender.

Skim fat from broth.

Serve broth as a first course, then meat and vegetables.
