Ingredients
300gred split lentils masoor dal
1white onion, diced
3ripe tomatoes, diced
4 clovesgarlic, minced
2cmfresh ginger, minced
1 tspturmeric
1 tspground cumin
3 tbspghee or oil
1 tspcumin seeds
1 tspmustard seeds
2dried red chillis
1 pinchasafoetida
1 handfulfresh coriander
Instructions

Simmer lentils in 800ml water with turmeric until completely soft, about 20 minutes.

In a separate pan fry onion in 1 tbsp ghee until golden.

Add garlic, ginger and tomatoes, cook 8 minutes.

Add ground cumin, season and pour over cooked lentils.

Simmer together 10 minutes, adjust consistency with water.

For tadka: heat remaining ghee until very hot.

Add cumin seeds, mustard seeds, dried chillis and asafoetida — it will sizzle dramatically.

Pour sizzling tadka over dal at the table, scatter with coriander.
