400gpoha flattened rice
1large onion, finely diced
2green chillis, slit
80groasted peanuts
1 tspturmeric
1 tspsugar
1 tspsalt
3 tbspvegetable oil
1 tspmustard seeds
1 tspcumin seeds
15curry leaves
1 handfulfresh coriander
1lime, juiced
Instructions

Rinse poha under cold water and drain — it should be just moist, not soggy.

Mix turmeric, sugar and salt through the poha.

Heat oil, add mustard seeds and cumin seeds until they pop.

Add curry leaves and green chilli.

Add onion and cook 5 minutes until soft.

Add seasoned poha and peanuts, toss gently.

Cover and steam on low heat 3 minutes.

Squeeze lime juice over, scatter with coriander and serve immediately.
