400gbaby potatoes, halved and boiled
400gfresh spinach, roughly chopped
1onion, diced
3 clovesgarlic, minced
1 tspginger, minced
1 tspmustard seeds
1 tspcumin seeds
1 tspturmeric
1 tspgaram masala
3 tbspvegetable oil
Instructions

Fry mustard and cumin seeds in oil until popping.

Add onion, cook until golden. Add garlic, ginger, turmeric and garam masala.

Add boiled potatoes, stir to coat and fry until golden, 5 minutes.

Add spinach in batches, stirring until wilted.
