Beef simmered in deep red dried-chile sauce — rich, earthy and satisfying. Toasting the dried chillies briefly in a dry pan before soaking them wakes up their flavour and gives the sauce its deep, earthy character.

800gbeef chuck, cut into cubes
4dried guajillo chillies
2dried ancho chillies
2dried pasilla chillies
4 clovesgarlic
1onion, quartered
1 tspcumin
1 tsporegano
400mlbeef stock
2 tbspoil
saltto taste
Instructions

Toast dried chillies in a dry pan 30 seconds each side.

Soak in hot water 20 minutes. Drain.

Blend chillies, garlic, onion and spices with stock until very smooth. Strain.

Brown beef in oil in batches.

Add chile sauce to pot. Bring to simmer.

Cook covered 1.5 hours until beef is very tender.

Serve with rice, beans and warm tortillas.
