Ingredients

2 cupsfirm tofu
2edamame
1daikon
1/2 cupscallions
2 cupsshort-grain rice
1 tspwasabi
1/4 cuptamari
1 tspmirin
2 tbspolive oil
to tastesalt and black pepper

Instructions

Press the tofu between paper towels to remove excess moisture, then cube it, season, and simmer over medium-high heat until well browned, about 9 minutes.

Add the edamame, daikon and scallions, cooking until softened, about 4 minutes.

Stir in the wasabi, tamari and mirin for 3 minutes.

Cook the short-grain rice separately and set aside.

Let the tofu simmer for about 15 minutes so the flavors meld.

Taste and adjust the seasoning.
