
Beef Pho
Vietnam's iconic slow-simmered beef broth with star anise, cinnamon and ginger — served with rice noodles and fresh herbs.

Instructions
Char onion and ginger directly over a gas flame or under a grill until blackened.
Blanch beef bones in boiling water 10 minutes, drain and rinse.
Toast star anise, cinnamon and cloves in a dry pan until fragrant.
Combine bones, charred onion, ginger, spices and brisket in a large pot with 4L water.
Simmer on low heat 3 hours, skimming regularly.
Remove brisket, strain broth and season with fish sauce and sugar.
Soak noodles in hot water, divide between bowls.
Add sliced raw sirloin and brisket, ladle boiling broth over to cook the beef.
Serve with bean sprouts, herbs, chilli and lime on the side.
