Middle Eastern flatbread topped with a za'atar herb blend and olive oil. Mixing the za'atar with plenty of olive oil into a paste, rather than sprinkling it dry, stops it burning bitter in the hot oven.

Ingredients

300gplain flour
7ginstant yeast
1 tspsalt
1 tspsugar
200mlwarm water
2 tbspolive oil
3 tbspza'atar blend
4 tbspextra-virgin olive oil for topping

Instructions

Mix flour, yeast, salt, sugar, water and oil into a dough. Knead 8 minutes.

Prove 1 hour.

Divide into 4 balls. Roll each into an oval.

Mix za'atar and olive oil to a paste.

Spread liberally over flatbreads.

Bake at 220°C for 8–10 minutes until edges golden and za'atar fragrant.
